Régis Marcon, owner of the three Michelin-starred l’Auberge des Cimes, needs no introduction...

Recently renovated, the establishment, in the hills of Saint-Bonnet-le-Froid, offers cuisine which is innovative, traditional and seasonal. Under the guidance of the head sommelier, Laurent Blanchon, the wine room recently had a facelift and has been fitted out entirely with EuroCave equipment.

Here, the menu is constantly changing. Every week it offers new products and new dishes.

Let’s turn back the clock a bit…At the time, the establishment had only one cellar, in the basement. It wasn’t until 2004, when they created their new kitchen, that the Marcon family equipped themselves with 4 EuroCave wine cabinets.

That’s why, last April, when the private function room was converted to a wine room, l’Auberge des Cimes naturally turned to EuroCave to fit it out. In this way, three Wine Bar 8.0 cabinets allow 24 vintages to be served by the glass whilst four wine cabinets – including two 2-temperature cabinets – allow the wine to be stored and brought to an ideal serving temperature.

With over 25, 000 bottles, l’Auberge des Cimes now has 550 wines on its wine list.

The career path of the head sommelier Laurent Blanchon

Having just completed his studies, he met Régis and Jacques Marcon, a meeting which marked him to such an extent that he has remained with them to this day.

Working in Haute-Loire for over sixteen years, he puts his expertise to good use at l’Auberge des Cimes and tends to recommend visitors wine by the glass service.
